A simple and interesting greek style salad, that switches up the classic recipe in favour of capers and pickled red onions.
I stumbled across this recipe at a fantastic greek fast food restaurant in soho. It was one of those “it's pouring with rain, I'm really hungry, go into the first place we find” kind of moments.
It was absolutely tiny and we had homemade pitas stuffed with roast chicken and this absolute dream of salad which was a few simple ingredients that just worked so well together.
I’ve now made the recipe countless times now, it’s a real winner for a sunny bbq and a nice alternative to a classic greek salad.
Serves 4-5 as a side dish
Ingredients
1 medium size bowl of cherry tomatoes, any smaller tomatoes will do
3 tablespoons of caster sugar
1 red onion
White wine / or apple cider vinager
3 heaped tbl capers
1 small handful of black olives
4 sticks of feta
Handful mint
Olive oil
Half a lemon
Salt and pepper
Method
Thinly slice your red onion and cover with vinegar, in a glass dissolve your caster sugar with a little warm water and add to your onions - leave to sit for 1 hour
Chop your cherry tomatoes into halves or quarters depending on the size
Toss in a bowl with capers, chopped black olives and crumbled feta cheese
Once your onions have sat, dispose of the pickling liquor and add your onions
Toss the salad with a slug of olive oil, squeeze of lemon and seasoning and add your roughly chopped mint
Taste to serve, you might want to add a sprinkle of suga
