My favourite salad in the world is a grilled peach salad.
I have another recipe from last summer which is on the blog but this year it's been tweaked and elevated to dizzyingly new heights, I joke it's just a peach salad. But, it is really very delicious, and when you put grilled fruit in salads (not raw), people assume you are all kinds of sophisticated, so it's really a win win.
This salad would work well with lots of swaps, in terms of cheese it would be delicious with burrata, feta or even goats cheese.
You could add tomatoes etc , I just like how simple it was with the colours and textures of the green veg and sweet warm peach.
Serve with lots of warm bread and olive oil of course!
Serves 4 as a side
Ingredients:
3 peaches
2 balls of fresh mozzarella
3 small crispy gem lettuce, washed and roughly chopped
A handful of chopped mint
A lemon, juiced
A drizzle of honey
A large handful of chopped pistachios
1 courgette, ribboned using a veg peeler
1 large avocado or 2 small, cut into segments
Olive or rapeseed oil
Salt & pepper
Method:
Set up your platter with the washed leaves, ripped mozzarella, avocado and courgette ribbons
Slice your peaches into segments and grill with a drizzle of oil and honey
Leave on the grill or in a frying pan for 3 minutes - making sure to turn over, once the skin colours and catches they are ready
Place the warm peaches on top of your leaves
Cover with your chopped nuts
Drizzle with more oil and the lemon juice
Season with salt and pepper and finish with fresh mint
