Pineapple on pizza, pineapple in a cocktail, pineapple in salad. Pineapple is the most delicious of all fruits. It deserves its place anywhere in my humble opinion.
This recipe is a fab summer salad, it's so easy to knock up (takes approximately 3 minutes) and goes really well with strong flavours at a bbq, for example sticky spicy asian flavoured meat.
Make sure you generously dress it with lime, olive oil and chilli - it can handle a kick.
Serves 3 (as a side)
Ingredients:
Half a pineapple
1 bag of rocket
1 small pot of ricotta
Handful of radish
Pine nuts
1 lime
Olive oil
1 fresh chilli or 1 tablespoon lazy chilli
Method:
Set up your platter with the washed rocket, sliced radish and crumbled ricotta
Slice the pineapple into thin segments and roast on a griddle for about 3 minutes with a drizzle of oil
Once the pineapple has a touch of colour they are ready, take off and immediately put the hot pineapple in the salad (it will slightly melt the ricotta - delicious)
Toast the pine nuts and add to to the salad
To make your dressing, in a bowl mix lime juice, chilli and a good slug of oil - cover salad with dressing
Season & serve
