If you are a friend of mine you probably know I love courgettes - sad I know, but I really do. They are really delicious raw and are perfect alongside some creamy feta and fresh mint.

I've been eating this non-stop, as it so easy and quick to knock up with just a few ingredients. You could pair it with Asian flavours by swapping out the mint for coriander & spring onions and the feta for sour cream!
I personally think spiralizing anything is a waste of time and makes veg go a bit sad and watery, so save your money and just use a vegetable peeler.

Serves 2-3 as a side dish
Ingredients
1 large courgette
1 lime
Olive oil
Salt and pepper
Chunk of feta
Handful of mint
Method
Peel the courgette into ribbons using a vegetable peeler
Toss in a bowl with a slug of olive oil and juice of lime
Crumble in feta and add roughly chopped mint
Season to taste
